Birthdays mean VEGAN CAKE! For my brother's I made this rich chocolate cake from Post Punk Kitchen. Recipe here :)
The only difference is I used all whole wheat pastry flour.
I also made a glaze for the top which basically consisted of:
1 cup coconut milk
3 TBL earth balance (melted)
1 cup of organic raw cane sugar
Pre cake: We went to Eastside Grill, which is a great restaurant in Northampton. They made me this special concoction of veggies with olive oil, garlic, tomato sauce and pasta. Lots of huge mushrooms, spinach, artichokes and fresh asparagus.
THE FAMILY above, and Mikey and I below. Great night for a birthday.
Make sure to refrigerate the glaze a few hours before putting on top of the cake.
Also above Trader Joe's half vanilla soy ice cream with mango sorbet combo. Orgasmic.
