Most amazing vegan chocolate cake with "butter cream" frosting. Inspired by http://tastyvegan.blogspot.com "mexican cake" ingredients. But I made a few alterations as you will see below, such as apple sauce for oil, soymilk for water, no vinegar etc...and I made a different frosting.
Cake ingredients :
1.5 cups flour
1 cup organic sugar
4 Tbsp. cocoa powder
1 tsp. baking powder
1 tsp. cinnamon
1/2 teaspoon cayenne pepper (really adds to the cake)
1 tsp. vanilla
5 Tbsp. applesauce
1 cup vanilla soymilk
Pre-heat oven to 350. In a bowl sift flour, sugar, cocoa powder and baking soda. Then add the rest of the ingredients and mix together. Bake for about 35 minutes in a 9 inch square cake pan.
We made our own " vanilla butter cream" frosting which was too die for. Seriously, amazing. From www.veganchef.com, just look under the dessert recipes. So easy and delish! Happy weekend! And an awesome poem below:
