This is going to be short, I went out last night and came back this afternoon (it's becoming a routine...) after closing down about every bar in Downtown Northampton and staying in the backroom of one with the staff till 5 am...
I woke up this morning in a completely different town, and I need SLEEP stat so quick post and I am out!
I heart TEMPEH cooked right. This is a tempeh stir-fry I usually make depending on the fresh or frozen veggies I have on hand. First, fry the tempeh in a good amount of olive oil and season with salt and pepper and a bit of balsamic. Flip when ready. Add veggies, let it cook down, season to taste and VOILA! MoFo TEMPEH :) This one had some of the peppers obv, corn, green beans and spinach. Delish!
