MoFo Pumpkin Goodness...FINALLY ;)

So I know I am by far the last person to use pumpkin while cooking or baking during this month. But hey, better late then never. 

This is an adapted recipe from VegWeb.  PUMPKIN OATMEAL MUFFINS!
A few alterations of my own: I used whole wheat flour instead of  all-purpose and vegan cane sugar instead of brown sugar. I also added pure vanilla extract, more pumpkin pie spice, and did not use nuts or make an icing. They are just soo good all hot and with some Organic Earth Balance spread inside.

Mini muffins in the silver tin and normal size in the black pre-oven :)

All baked up with some dried cranberries for garnish...very MoFo scrumptious

Ooooo-eeee. I'm all about those pumpkin muffins. With the cranberry garnish. Nice! Remember the group the Cranberries? Wasn't there a cool line about them in the movie Clueless, one of the all-time fun flicks?
